Restaurant La Grisa

Restaurant La Grisa occupies the former Alla Pace tavern in the old part of Bale and belongs to the hotel of the same name. Its cooking connects the Istrian countryside with the coast, using organically grown vegetables and salad leaves from the house garden and olive oils from its own and nearby groves. The menu moves between familiar regional ingredients and more contemporary combinations. Boškarin, the native Istrian cattle breed, appears as carpaccio with black truffle and as ribs accompanied by a Roman style gnocco, carrot and pickled vegetables. Fish starters include octopus salad with fennel and white fish tartare with citrus. For a warm seafood dish, there is brodet made with octopus, cuttlefish and wild fish, served with polenta. Rigatoni with clams, mussels and queen scallops provides another route through the seafood selection. Main courses include sea bass with cauliflower cream and fennel, while cauliflower with goat cheese and parsley offers a vegetable based alternative. Truffle returns at dessert in black truffle ice cream with vanilla cream and a crumble of almonds and hazelnuts. In warmer weather, tables in the inner courtyard or beside the cistern bring the meal into Bale's stone surroundings.
