Ristorante President stands on Piazza Schettini in central Pompei, close to the archaeological excavations and the sanctuary. Its dining spaces combine carefully controlled lighting with distinctive furnishings, creating an intimate setting for a meal built around composed dishes and tasting menus. The kitchen's published selection brings together ingredients associated with Campania and combinations that reach further afield. Paolo Gramaglia's quiet egg pairs a gently cooked egg with Silano caciocavallo fondue, peppers and crumbled Neapolitan tarallo. A mixed pasta preparation draws its flavor from crustaceans, seaweed and seafood, while another pasta dish combines broad fusilli with bottarga, prawns and lemon. Fish appears in several forms: amberjack marinated with lime and passion fruit, grouper with tubers and ginger, and red mullet matched with lemon and beetroot. Meat dishes include pork belly with broccoli rabe and a sweet and sour sauce, alongside beef accompanied by Neapolitan papaccelle peppers and zucchini prepared in the scapece style. The dessert selection continues the interplay between local references and unexpected combinations, with an Amalfi lemon sphere and a reinterpretation of Neapolitan pastiera among the published examples. Several tasting routes are offered, and each tasting menu is intended for the whole table. Guests can also assemble a shorter selection from the dishes, including dessert. Wine can be chosen from the cellar list, or the sommelier can arrange a pairing to accompany the meal. The restaurant publishes separate lists for wines by the glass, dessert wines and spirits.
